Traditional melomakarona

  • 2 ½ cups of olive oil
  • 500 g. walnuts, roughly crushed
  • 1 ½ cup of sugar
  • 2 tbsp. honey
  • 1 small glass lye
  • ½ small glass cogniac
  • 2 tsp. baking soda
  • 3 tsp. baking powder
  • Zest and juice from one lemon and one orange
  • ½ tsp. cinnamon
  • ½ tsp. carnation
  • As much flour as needed for the dough to soften

For the syrup:

  • 2 cups of honey
  • 2 cups of sugar
  • 2 cups of water
  • 2 cups of choppped walnuts for sprinking


Mix the sugar and olive oil in a bowl until the sugar has melted and add the remaining ingredients gradually. Cut and shape the dough into small buns and place into a greased pan. Bake in a pre-heated oven for approximately 20 minutes.
Boil the sugar, honey and water for approximately 10 minutes and leave until lukewarm. Dip the buns into the syrup and sprinkle with the chopped walnuts.
